Not only is this brand of cobia cultivated in the most eco-sensitive & beneficial manner known, this fish is exquisite in taste & readily flexible for whatever your culinary application. Firm & light in color, it is wonderful raw and superb grilled. And with its Omega levels off the charts, look for cobia to be listed as one of the new ’superfoods’. For me, it’s the healthiest pleasure in the seas.

I appreciate your site. I am a chef from TX, now living in HI, and I had always thought of my home Republic as a little backwards and not forward looking to local and sustainable cuisine. Thank you for doing this. When I move back to TX, your site will be a link to what I need to be doing as well as a source for great purveyors. Keep it up.
